Michelin Chef José Andrés 2-Ingredient Microwave Omelette is Popping Up Again: Here’s How It’s Done

If you thought making an omelette in the microwave would make any professional chef cringe, think again!

Spanish chef José Andrés, owner of the 2 Michelin-starred restaurant minibar by José Andrés, has the perfect hack to make your microwave omelette the fluffiest, creamiest one you’ve ever had.

The secret? Mayonnaise. In a 2021 TikTok, the chef shared the simple method and ingredients. Crack a single egg and dollop a large scoop of mayonnaise into a glass measuring cup. The chef then vigorously whisked the mixture with a fork, saying, “all the mayo and the egg become one!”

Whisking the mixture until everything is fully combined and it has a silky texture is key. Andrés then made sure to use a spatula to scrape down the sides before putting the glass measuring cup right in the microwave.

After 40 seconds to one minute, the chef then removed the measuring cup from the microwave before turning out the omelette onto a plate.

To top it all off, Andrés grated some fresh parmesan cheese and added some freshly cracked black pepper before digging in. The result is an impressively smooth, creamy omelette that is still perfectly soft in the middle.

Andrés recently recounted the hack once again during his interview on the podcast “The Joe Rogan Experience” this past May, impressing host Joe Rogan and his viewers and leading to lots of recreations of the recipe across social media.

This year, as co-host of NBC’s Yes, Chef! alongside Martha Stewart, Andrés has also had the opportunity to mentor chefs with huge culinary potential that have a tendency to let their personal issues get in the way of their work in the kitchen.
